Foods like ribs, pork tenderloin, and chicken are smoked on 520-square feet of cooking space that’s divided among four racks. Some heating problems

Though the heating on the smoker is mostly consistent, the tray at the bottom rack does get the most heat. Be careful about what you put down there or it could get burned. One solution is to not use that tray, or to cook foods there that need a shorter smoking time than food on the higher trays.
