Which coating is best for nonstick? It depends on what you mean by best. Polytetrafluoroethylene (PTFE), also known as Teflon, makes for an extremely slippery surface resulting in a highly effective nonstick pan. However, at higher temperatures (over 500F) Teflon can start to degrade resulting in the release of toxins.
The other nonstick option is ceramic coated pans. These tend to be safer, as they don’t contain the same toxins as PTFE, however, some say the “non-sticky-ness” of these pans only last about a year. (Other people love them though so you may have to try one out for yourself.) If you are looking for a nonstick pan that is incredibly slippery and durable, then go with the PTFE coating. If you’re going to be cooking at extremely high temperatures (broiling etc.) or you’re worried about toxins then the ceramic coating is probably for you.
Are nonstick pans safe to use? The short answer, yes. As we mentioned above, nonstick cookware coated with PTFE only becomes a concern if you’re heating it to super-high temperatures. If you are cooking on the stovetop or in the oven at 350F then there’s no need to worry. How long do non-stick pans last? Well, it depends. There are a few criteria that need to be considered.
